Mama: Josie, mother of 7 month old Shep

Josie has her hands full being a new mama and also finishing up her last semester to become a Nurse Practitioner.  She’s pretty much super woman as she balances her studies with nursing her little one and eating well.  And she does it all without complaining and with much joy.

New Mom Recipe & Tip:   ‘Since I like to eat immediately upon waking, and Eddie usually has the coffee made already, I’ve been having a slice of zucchini bread in the early ams. (Seriously, this hazelnut zucchini bread recipe is currently my favorite.) It’s like a reward for waking up so early with my little (big!) guy. This tides me over until second breakfast which is a bit more substantial like egg in a frame (I usually put some sort of fancy spread like pesto, olive tampenade, or artichoke) on one side while the egg is cooking in the hole.’

What she enjoys most about being a mom: ‘experiencing all of Shep’s firsts like his first smile and first giggle’

What surprised her most becoming a mother: ‘the abundant love that I had for Shep the first time I laid eyes on him’

Eggs in a Frame Recipe

You can make eggs in a frame without a spread or with whatever you have on hand.  Try pesto, hummus, tomato saucered pepper cashew sauce, or edamame hummus.  We used a store bought artichoke spread that was delicious!

A quick and easy lunch or breakfast for new moms or anyone on the go.
Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients
  

  • 1 slice toast
  • 1 egg
  • 1 tablespoon spread pesto, artichoke spread, hummus , or anything you have around

Instructions
 

  • Using a biscuit cutter, cookie cutter or just the top of a glass, cut a hole in the middle of your slice of bread. Butter or oil a pan and turn heat to medium. Add the toast to the pan and crack the egg into the center.
  • Cook for about 2-3 minutes then flip and cook for an additional 1 minute.
  • Spread your condiment of choice onto the bread and enjoy!

  1. That sounds totally delicious and easy. I love breakfasts that I can make for both myself and my 2 year old–and can adapt it so I feel like a grownup every once in awhile.

    • I too love making simple things a little more fancy and grown up 😉 Hope you and your 2 year old can enjoy this together and make up your own silly name for it!

  3. How funny, I was just thinking of making this! Thanks for the different take on it, I’ve been making these for years and never thought to try it with artichoke spread, or any other bread besides boring sliced bread for that matter 🙂 I like the name too. (They were introduced to me as Birds Nests) Cheers!

    • I love all of the different names of this same dish! So far people have told me they call it – Popeye’s Eggs, Eggs in a Hole, Spit in the Ocean, Eggs in a Basket Toad in the Hole, and Birds Nest. People have been quite creative at naming this simple meal!
