Mama: Josie, mother of 7 month old Shep
Josie has her hands full being a new mama and also finishing up her last semester to become a Nurse Practitioner. She’s pretty much super woman as she balances her studies with nursing her little one and eating well. And she does it all without complaining and with much joy.
New Mom Recipe & Tip: ‘Since I like to eat immediately upon waking, and Eddie usually has the coffee made already, I’ve been having a slice of zucchini bread in the early ams. (Seriously, this hazelnut zucchini bread recipe is currently my favorite.) It’s like a reward for waking up so early with my little (big!) guy. This tides me over until second breakfast which is a bit more substantial like egg in a frame (I usually put some sort of fancy spread like pesto, olive tampenade, or artichoke) on one side while the egg is cooking in the hole.’

You can make eggs in a frame without a spread or with whatever you have on hand. Try pesto, hummus, tomato sauce, red pepper cashew sauce, or edamame hummus. We used a store bought artichoke spread that was delicious!
Josie's Eggs in a Frame
- 1 slice toast
- 1 egg
- 1 tablespoon spread pesto, artichoke spread, hummus , or anything you have around
- Using a biscuit cutter, cookie cutter or just the top of a glass, cut a hole in the middle of your slice of bread. Butter or oil a pan and turn heat to medium. Add the toast to the pan and crack the egg into the center.
- Cook for about 2-3 minutes then flip and cook for an additional 1 minute.
- Spread your condiment of choice onto the bread and enjoy!
