It’s only slightly feeling more like Spring here… and by that I mean, at least there are more days with blue skies and the snow is melting. Though, I’m sure a few more winter storms are on the horizon, we can at least start day dreaming of spring, when asparagus is fully ripe and fresh spring peas are readily available. There are now more green vegetables popping up at local markets and we’re still seeing lots of citrus fruits. Mushrooms also begin to make their appearance this time of year. Here’s to enjoying the last of winter, with creamy cauliflower soup or steamy mushroom risotto!
