Lemon Poppy Seed Muffin Recipe

Lemon Poppy Seed Muffins are a favorite of my husband’s and one he grew up enjoying.  When we got married his sweet mother in law handed me several recipe cards of all of Josh’s favorite recipes that I needed to learn, one of which was an orange poppy seed cake. Though I haven’t made that one yet (and I can attest to its deliciousness), I do make these lemon poppy seed muffins for him from time to time. I hope I get some bonus wife points for that.

This past weekend we had one of our best SLCmixers yet. We gave the crazy heat here in Utah the strong arm and tasted Gelato all afternoon long.  And after we had our fill of gelato everyone left with a lemon poppy seed muffin for their Sunday breakfast. We hope for our gatherings to be gifts that keep on giving as people make new friends, taste more local products, and leave with a treat baked especially for them by me.

Lemon Poppy Seed Muffin Recipe

Lemon Poppy Seed Muffins with Lemon Glaze

Ingredients

    for the muffins
  • 1 stick unsalted butter
  • 1 cup sugar
  • 1/2 teaspoon salt
  • zest from 1/2 of a lemon, plus a good squeeze of juice
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 1/2 cup whole milk
  • 2 cups all purpose flour
  • 1.5 teaspoon baking powder
  • 1 tablespoon poppy seeds
  • for the glaze
  • 1/4 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

    for the muffins
  1. Using a mixer cream the butter, sugar, and salt. Add lemon zest and juice, eggs, vanilla, and milk. Add dry ingredients. Stir in poppy seeds.
  2. Bake at 350 degrees for about 25 min.
  3. for the glaze
  4. Whisk together powdered sugar and lemon juice, adding just enough lemon juice to make the mixture a liquid. Use a pastry brush to brush the glaze over the muffins when they are hot out of the oven.
