My husband and I have different ideas of what a packed lunch should be. He wants cheese and lots of protein, I want veggies and lots of flavor. When Fiber One and SheKnows asked me to create ideas for brown bag lunches I knew it would be a good challenge, but I found an easy way to satisfy us both while using a few easy ingredients and minimal time.
We start with wraps – for him, I use whole wheat tortilla and for me, I like a collard green (save the carbs for breakfast and dinner!). Then we both get quinoa in our wraps. I fill mine with raw shredded veggies, avocado, and hummus while his is loaded with bacon, and avocado. See we do have a few things in common at least! Then, a squeeze of lemon juice for me and a drizzle of sriracha for him and we’re both happy!
As for what else is in our bag, it’s just as different. He likes a banana while I take an apple. Cheese stick for him and a few chocolates for me.
Lunches should be easy but also something healthy and likable. And even for two people with distinct tastes I promise it is possible!
And I love to be sneaky and put in a note or verse of encouragement. I personally need a little boost mid day and nothing gets my mind back on the right path like a simple verse. Here are a few good ones:

His and Her Brown Bag Lunches
Two easy recipes for his and her brown bag lunches.
Ingredients
Her Lunch
- 1 large collard green leaf
- 2 tablespoons of hummus
- 2-3 tablespoons of quinoa
- 1/4 cup shredded veggies, I like beets and carrots
- 1/4 avocado, sliced
- 1 teaspoon lemon juice
His Lunch
- 1 wheat tortilla
- 2-3 tablespoons cooked quinoa
- 1 slice bacon, cooked
- 1/4 avocado, sliced
- 1 teaspoon apple cider vinegar, a spash
- 1/4 teaspoon sriracha, a drizzle
Instructions
Her Lunch
- Rinse then soak collard green in water with a teaspoon of distilled white vinegar. Soak for just a few minutes. Meanwhile, shred carrots and beets and slice avocado.
- Dry the collard wrap and lay out flat. Trim the stem and shave off a little if its too thick towards the bottom of the leaf.
- Spread hummus over the collard green. Add quinoa, shredded veggies and avocado. Squeeze lemon juice on top.
- Fold the bottom of the wrap up slightly then roll up one side to the other tightly. Secure the wrap with a toothpick.

- Lay out tortilla. Add quinoa, bacon and sliced avocado. Splash with the cider vinegar and sriracha.

I love the idea of using collards as a wrap. I need to experiment…
Lydia, I think you would love them! Make sure and soak the collards in water with a little bit of vinegar so they are more pliable. Then trim the stem and shave the stem going through the leaf so it’s not too thick. Then you have the perfect leaf for a wrap!
