Beet Cherry Berry Smoothie from Best 100 Smoothies for Kids

Ever since getting my hands on Deborah Harroun’s book, Best 100 Smoothies for Kids, my house has been smoothie obsessed.  We’ve been making smoothies, like this Beet Cherry Berry Smoothie, for snacks, breakfast or even dessert. Before this, I had one or two smoothie recipes up my sleeve (mostly ones borrowed from friends like this one or this one) and every time I tried to improvise a smoothie, it just didn’t come out right.

Deborah’s book has filled our kitchen with inspiration. Even Everett calls out for a ‘smoodie’ when I reach in the freezer for fruit or bring the blender to the counter top.  And while her cookbook implies that the smoothie recipes are for kids they are definitely also for adults.  I’ve enjoyed every recipe we’ve tried.  One of the best parts is that every recipe has no sugar added.

I venture toward her veggie-heavy smoothie recipes because I figure it’s a great way to enjoy veggies without any persuasion needed for any of us.   She has tons of recipes using veggies like beets, kale, carrots, spinach and even cauliflower and broccoli.  I haven’t tried all of them yet but she did get me hooked on carrot juice. Several of her recipes call for carrot juice which I now buy on a regular basis.

Before, I would try to pack out a smoothie with too many greens or not enough liquid and it was all imbalanced and ended up untasteful.  This little handy book has brought my smoothie making to new levels which we’re all enjoying!

Beet Cherry Berry Smoothie

A bright and refreshing veggie and fruit smoothie packed with nutrients, perfect for breakfast or lunch.
Prep Time 5 minutes
Total Time 5 minutes
Course Breakfast, Snack
Cuisine Dairy Free, vegan
Servings 4 8 ounce servings

Ingredients
  

  • 1 1/2 cups almond milk*
  • 1-2 small raw beets
  • 3/4 cup frozen cherries
  • 3/4 cup frozen strawberries
  • 2 cups kale, loosely packed, stems removed and leaves chopped

Instructions
 

  • Pour the milk into the blender. Peel the beet, cut into thin slices, and add it to the blender.
  • Add the cherries, strawberries, and kale. Blend until smooth.

Notes

for a vegan and dairy free version use coconut or almond milk.

  1. Would love to win this! As you will recall, I am way too picky of an eater to get all my fruits/veggies in the “normal” way, so smoothies are great for someone like me 🙂 My favorite go-to recipe is a combo of spinach, strawberries, blueberries, banana, skim milk, cinnamon, and honey!

  3. So yummy! I love to combine almond milk, a ripe banana, ice, cinnamon, and honey for an horchata-like drink. Sometimes I’ll throw in a spoonful of peanut or almond butter. Delish!

    • Miranda, your horchata smoothie sounds amazing!! Have you tried freezing the bananas too? It may make for a more milk shake like drink! I love frozen bananas in my smoothies. To freeze them peel and slice then freeze on a cookie sheet and once frozen transfer to a bag. Hope you’re enjoying your St. Louis summer!

  5. what a great giveaway. we adore smoothies right now. arizona makes it feel like we are living on the sun so we drink smoothies for a cool treat. we love coconut milk, banana, kale mix, cantalope, peach, yogurt, flax meal and ice. yum!

  6. Looks like such a great book! My 20 month old asks for a “smoonie” first thing EVERY morning! He often won’t eat much breakfast after so I try to pack it full of healthy stuff, however, sometimes they come out kind of odd… Especially if I accidentally overdo it on greens. This recipe looks great and I may have to get my hands on this book.

    • Rachel, my smoothie turn out odd all the time… definitely over-do it on the veggies and greens. This book was good at giving me some balance 🙂 I’ve been sticking to recipes more often lately 🙂
