Seasonal Produce for April

Written by Becky

The trees are budding and the flowers are blooming and it’s only the first of April in Utah.  I can hardly believe that spring is here.  This also means I have a lot of work to do in our backyard to get ready to plant our vegetable garden. But I have until mother’s day, right?  That’s what I’ve heard at least.  April wraps up the winter produce here in Utah, so get your last bites of the winter soups, stews, and desserts before summer gets here! There are also some tasty green veggies coming your way this month, like watercress and English spring peas (from photo above).

Here’s are a few of my favorite April recipes by local bloggers:

Curried Lentil Stew with Roasted Cauliflower by Cafe Johnsonia
Mushroom and Kale Omelet by Delightful Delicacies
Rice with Mushrooms Cuttlefish and Artichokes by Barbara Bakes
Strawberry Rhubarb Coffee Cake by Completely Delicious
Breakfast Migas with Avocado by Taste and Tell
French Onion and Mushroom Soup by Mountain Mama Cooks
Dill Potato Salad by Project Domestication
Roasted Asparagus Wrapped in Ham by Kalyn’s Kitchen
Smashed Chickpea and Avocado Sandwich by Two Peas and Their Pod
Wild Mushroom Lasagna by me
Warm Chicken and Spinach Salad with Bacon-Artichoke Dressing by Cookin’ Canuck

How to make the seasonal produce image appear as your wallpaper:

Step 1 Click on Wallpaper Image on right side bar, this will open the image in a new window on your screen
Step 2 Once image loads on a new page, right click (or ctrl-click) image and select ‘use image as desktop picture’
Step 3 If the image does not fit your desktop background neatly, you may have to go to your preference screen and choose “Fit to screen” as the display mode of your background image.

  1. Thanks as always for the mention!

I just tried to update my feeds so I was subscribed to the new url for both our blogs. I did it for SLCFoodie, but when I tried to add this blog (using the rss button at the top) I get a message saying “the feed being requested cannot be found.” I was able to subscribe by directly using the url, but I thought I would let you know that your button doesn’t seem to be working right.
