On-the-Go Breakfast idea

Rise and shine, foodies! I am Emilie with the food blog Chew on That, here with a crazy-easy idiot-proof breakfast that you will love…I promise!

As a busy person with a long commute, I know that when I’m strapped for time, it’s nearly impossible to think of anything but a certain quick fast food breakfast sandwich or a bagel smeared with 1000 calories of cream cheese (they always plop on enough to feed a small country). I think of these options right away because both establishments are fast and accessible on my way to work. What I really crave, however, is a healthy breakfast I can take on the go…something simply satisfying and quick to create. Why start the day off on the wrong foot when you can begin with a breakfast option that is both substantial and good for you?

Fresh Vegetable Vintage Mixer

Yummy (and vegetarian!), you will love this fresh alternative to the typical breakfast fare. The winning combination of vegetables will make you try this again and again, without any guilt! This is a definite winner that you will fall in love with…an uncomplicated relationship, shall we say? Pair with a quick protein shake or smoothie if you crave some fruit alongside your veggies.

Quick Mushroom and Cherry Tomato Breakfast Burrito

Ingredients

  • 1 handful orange cherry tomatoes, halved
  • 2 handfuls sliced Crimini mushrooms
  • 3 fresh tortillas
  • 2 eggs, whisked with salt and pepper
  • 1 handful Mexican shredded cheese
  • salt and pepper, to taste
  • guacamole or avocado
  • pico de gallo
  • butter

Directions

1. Sauté mushrooms in butter and set aside.
2. Scramble eggs.
3. When eggs are almost finished, add cheese and tomatoes.
4. Add mushrooms.
5. Wrap in a warmed tortilla and serve with guacamole and pico de gallo.

Wow, was that easy or what? Did I just blow your mind? Breakfast doesn’t have to involve cooking greasy bacon and flipping pounds of carb-loaded pancakes that take ages to prepare.

Pack this up for when you arrive at work and simply re-heat. If you want to eat it on your commute (not driving, of course!) it’s also an easy item to eat without the typical mess.
