It’s crazy hot here

in Utah. So hot you really don’t want to turn on the oven, not even to make a sweet dessert, which, as you know I love to do! How do I still get my sweet fix?… no bake cookies. I’ve experimented with a few recipes but this one is a classic. Who doesn’t love Nutella?!

Last week during our weekly #foodfeed time on twitter, our topic was ‘No-cook food for hotter than hell days.’ This got me thinking about no bake cookies. I’m not sure they were even mentioned during our chat but for some reason by the end, I was inspired to make something sans my oven. I actually was inspired by many things we talked about, a lot of which was raw foods, which you can read more about on our full post about the #foodfeed No-Cook Foods post. Nutella No Bake Cookie Recipe

Serving Size: 2 dozen

Nutella No Bake Cookie Recipe

Ingredients

  • 3 tablespoons butter
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 cup peanut butter
  • 3/4 cup Nutella hazelnut spread
  • 2 cups rolled oats

Instructions

  1. In a medium to large saucepan, melt the butter over medium to medium-low heat. Add the sugar, milk, and cocoa powder and mix until combined. Stir in the peanut butter and Nutella until melted, followed by the oats. Remove from stove. Continue mixing until all of the ingredients are incorporated.
  2. Working quickly, use a small ice cream scoop to shape balls of dough and place them on a parchment-lined sheet pan. Refrigerate for thirty minutes until firm. Store in an airtight container.

  2. It’s been too long since I’ve made no-bake cookies, I used to have them all the time when I was a kid. I love the twist of adding nutella. I think this is going to satisfy my next afternoon cookie craving!

  3. Something I’ve come across lately is the ability to make brownies and breads such as banana bread in the crockpot! It doesn’t heat the house up, and the goodies turn out nicely if made correctly. It took some experimenting, but it finally worked, even with the box mix I tried! One thing I’ve figured out is to not use butter if possible. It browns too quickly. Other than that, it works slower than the oven, but produces moist bar cookies and quickbreads. I am also very excited to try this recipe for the no-bake Nutella cookies! Thank you so much for sharing!

    • Michelle, I’m intrigued! What do you use instead of butter in your crock pot desserts? I’m a sucker for a warm and gooey brownie 🙂

  4. I made these today and used extra chunky peanut butter ( because, it was being discontinued for that brand and it was super super cheap) and they came out GREAT! They weren’t even done cooling/firming yet and my fiance was already digging in. I hope they make it until Christmas next week – I guess I will have to make some more batches!

  5. I made these as Christmas gifts for some of my family members and they LOVED them!! Some of those folk have a gluten-free diet and some are diabetic so I varied this recipe to accommodate for that and I think they were delicious. I used sucralose instead of sugar and I used almond butter instead of peanut butter. I am in love with this recipe. Seriously, every single person I gave these too (with all of their varied dietary allergies and issues) absolutely raved about these. Thank you for sharing!!!
