The Mango Lassi is quite possibly my favorite smoothie.
Throughout the last several months, Josh and I made our way through several of the recipes in our cookbook. Since we only had 3 months to complete it in (recipes were given to us by local chefs) we had friends and family test many of the recipes. Now, we could actually spend some time in the kitchen with the recipes that we worked so hard to get from the chefs around our city. Like this Mango Lassi from our favorite Indian restaurant in town, Saffron Valley.
About the Recipe
A Mango Lassi is basically a mango smoothie made with yogurt and milk and slightly sweetened with sugar. You can find it on most Indian restaurant menus. After trying it on our first trip to Saffron Valley, I can’t have a meal there without ordering it. And now, we all need one or the three of us fight over every sip (yes, Everett is included here).
When I make it at home, I make enough for us all three to have a full cup. I whip up the short list of ingredients in my trusty blender until its perfectly smooth and creamy, almost frothy on top.
After returning from our trip to Spain, all I wanted was simple food. Something light and refreshing and this smoothie did the trick. Although I don’t usually skip meals in lu of a smoothie, I think I could do a tall mug of this for breakfast or lunch. Maybe with a little something on the side (toast, an egg, or a small bowl of bran flakes maybe).
When I make smoothies at home they usually have a base of frozen bananas which makes them almost ice cream-like. Then I add in some other frozen fruit or veggies (carrots, beets, and kale all work well). And for a nice finish, I usually add in a spoonful of maple syrup or honey and maybe some seeds like chia seeds or flax seeds. This Beet Banana and Raspberry Smoothie is a great one if you’re wanting to mix up something with both fruits and veggies.
About Needing Refreshment
Josh and I are busy folks. He’s running a business and I’m running after a toddler. We don’t have many times of being unplugged so when we have the opportunity to get away, we often go far. Far enough to really unplug and get refreshed. We need refreshment in our marriage and our family.
This past trip to Spain was just that. We both got to watch Everett change as the week progressed. He’s makes changes daily now. We strolled and talked for hours about somethings important and about nothing important. We ate well and played well. It was just us. No friends, phones, must-take calls or emails. Just our little family of three navigating the streets of a foreign city. And we loved every minute of it.
We returned refreshed and more solid as a family unit. The time of connection helps us to care for one another more and connect more easily. If any walls were built up before they are now broken down.
I think all families need these times of refreshment. Sometimes we need a new start or a new experience in order to move forward in a healthy relationship. I am so grateful for the time we had and I enjoyed getting to share our trip here with you!

Mango Lassi Recipe
Ingredients
- 1 cup frozen mango
- 1 cup plain yogurt, not Greek and not vanilla
- 1/2 cup milk
- 4 teaspoons sugar
Instructions
- Place all ingredients in a high powered blender and process until smooth.
I love a mango lassi! I bought a bunch of mangos on sale at Whole Foods a few weeks ago and took the time to cut and freeze them to use in smoothies. I couldn’t agree more that time away, unplugged, is not only important but totally necessary to staying connected and grounded! xo
I so agree Kelley. The longer I’m married the more I see its necessity! Marriage is so hard and these times away are what give it more strength and longevity 🙂
