Remember that dressing I mentioned yesterday to pour over the super bowls we made … well here it is and I’ve been using it on top of just about everything! This creamy honey lime avocado dressing may be my favorite new condiment in the kitchen. It’s great to dress hearty greens like kale (or any green for that matter), great over roasted veggies, and even wonderful as a sandwich
spread. Try it, and let me know what you think!
Honey Lime Avocado Dressing Recipe
Creamy honey lime avocado dressing perfect for salads or roasted veggies.
Ingredients
- 1/2 large avocado, or 1 whole if it's small
- juice from 1 lime (about 2 tablespoons
- 1 tablespoon rice vinegar*
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1/2 tablespoon honey
- 1/4 teaspoon cumin
- 1/4 cup water
- salt, to taste
Instructions
- Combine all ingredients in a blender, food processor or immersion blender, or whisk until your hearts desire. Pour over salad, veggies, rice or grains.
Notes
*if you don't have rice vinegar, white or red wine vinegar should do the trick.
This is seriously the dressing of my dreams!

Do you have any idea how long this lasts in the fridge? I’m thinking of making your Super Bowls as packed lunches to last a few days..
I think it will last a good 5-7 days since the vinegar and lime keep the avocado from browning.

Michele, it should keep for about a week or so. The lime juice helps to preserve the green avocado color. As for another spice, you could try paprika, or a spice that you personally frequently use. Let me know how it turns out!

I am loving roasted veggie bowls and I think this dressing would transition well to the springtime. 🙂
Avocados are a great spring time food! I’ve also been adding them to egg salad.. more on that to come soon!
Made the super veggie bowls. So good! And the avocado lime honey dressing works great as a veggie dip if you up the avocado to a whole and play with the water to get the desired thickness.
How long does this last refrigerated? That I provided you don’t eat it all in one sitting
This one is best made fresh the day you’re going to use it or even right before using. The acid from the lime does help the avocado to stay fresh but it still could turn slightly discolored if you keep it too long without using.
