Somedays you just need a simple cocktail, something you can make with out having to run to the store to locate some rare liquor. It’s nice just to have a cocktail in your repertoire that you can make with just a few simple ingredients that you probably already have on hand. Cranberry juice, vodka, mint and lime combine to make this simple drink.
If you’re like me this weekend, you may just need a quick cocktail to put an end to the busy week. Josh and I were both in and out of meetings, working, and barely having a minute to relax this week so a stiff drink is calling our name. Also, over the weekend, we hope to check out the new city center and have some good friend time. We plan on checking out a new Mexican restaurant in town as well as sippin’ on some coffee at the next slc mixer with Joe from Nobrow Coffee. What are your weekend plans? Easy Cranberry-Pomegranate Lime Cocktail Recipe
Ingredients
- 1/2 cup cranberry pomegranate juice
- 2 shots vodka
- zest and juice of 1 lime
- 8 mint sprigs
- ice
Instructions
- Fill two small cocktail glasses with ice, then pour in 1/4 cup or more of cranberry pomegranate juice or juice of your choice. In a cocktail shaker, mix 2 shots of vodka with ice, 6 mint sprigs, lime zest and lime juice. Shake to combine. Pour lime/vodka mixture over the cranberry juice. Top with a couple of extra mint leafs.

Very refreshing! I made a similar cocktail with brandy and adding a touch of prosecco to make it a fun fizzy drink 🙂

I’m sure it will be good with or without alcohol! I would substitute the vodka with some tonic water. Enjoy!
