December Seasonal Produce List

Written by Becky

Though December can be pretty bleak produce wise, you do start to find things like juicy red pomegranates filling the shelves and suddenly the blustery season doesn’t seem so bad after all. Also, persimmons… have you tried a persimmon before?  Those are the bright orange with the tomato-like green stems and they are great in salads or mixed into quick breads like this gingerbread. Ohhh and chestnuts, we mustn’t forget chestnuts this time of year in soup, or just simply roasted. After re-looking through this list, December doesn’t seem bad at all.

Here are a few other ideas of what to do with this month’s seasonal produce.

Make this Brussels Sprout Salad with Walnuts.  This dish is always part of any holiday spread that we have at our house!

Try mashed rutabaga turnips, or parsnips instead of potatoes or mixture of them all (Kelley has a great mashed root vegetable recipe).

Pomegrante seeds are good just about any way you use them but here are a few ideas – Greek Yogurt Cheesecake with Pomegranate Sauce, Roasted Squash with Chestnuts and Pomegranate, Sweet Potato Baked Oatmeal with Pomegranate or Pomegranate Cornbread Stuffing.

Lemons… what can’t you do with lemons?!  This Lemon Pudding Cake, Lemon Ginger Icebox Cake, and fresh Lemon Curd are just a few of my favorite lemon recipes.
