Blueberry Apricot Cobbler Recipe

I am my father’s child.  We both unknowingly requested cobbler for our summer birthdays this year. For my birthday, I asked Josh to make me this Blueberry Apricot Cobbler Recipe and for my dad’s, he asked me to make a Blueberry Cherry Cobbler.  I used the same recipe for both with one secret ingredient that I think makes this cobbler recipe over the top!

And the secret ingredient… beside perfectly ripe summer fruit… is… almond paste.  Almost paste is made from ground almonds and sugar in equal quantities mixed with small amounts of oil, eggs, cream or corn syrup as a binder. The almond flavor plus the chewy texture really does improve the average cobbler recipe by leaps and bounds. Almond paste is commonly used in special pastries and cookies. You can find almond paste and specialty food stores like Whole Foods or Sprouts.

I discovered this special cobbler recipe in the latest issue of Bon Appetit. It was one of the reader requested recipes that you see at the beginning of many magazines.  One reader asked for this recipe from the Frog Hollow Farm Cafe in San Francisco. My mom and I visited that very cafe several years ago and I still remember the flavors of their beautiful baked goods.  So, I knew this cobbler recipe would be exceptional!

When my dad visited us I made him this birthday treat, and we enjoyed all of the foods we share cravings for… waffles, pancakes, ice cream.  My mom enjoys them all too, but my dad and I to an even greater degree. My dad and I can easily finish off a big plate of pancakes covered in maple syrup and we both always request two scoops of ice cream over our pie and cobbler for the perfect ratio. So, thank you dad for giving me an excuse to enjoy cobbler twice this season and for giving me quite the advanced sweet tooth.

Blueberry Apricot Cobbler Recipe

Use any fruit for this incredible Summer cobbler recipe!

Ingredients
  

fruit filling

  • 3 pounds apricots and blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt

cobbler topping and assembly

  • 1/2 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup butter, 1 stick at room temperature
  • 3 1/2 ounces almond paste
  • 1/2 cup granulated sugar
  • 3 large eggs, room temperature
  • 1/4 cup almonds, whole or sliced
  • vanilla ice cream (optional - for serving)

Instructions
 

  • In a large bowl, toss apricots and blueberries with granulated sugar, flour, and salt. Transfer to a 13x9 inch baking dish; set aside.

For the cobbler topping:

  • Preheat oven to 350°. Whisk flour, baking powder, and salt in a medium bowl. Using an electric mixer, beat butter, almond paste, and granulated sugar until light and fluffy, about 4 minutes. Add eggs one at a time, beating to blend after each. Mix in dry ingredients.
  • Drop dollops of batter over fruit (batter will even out during baking). Sprinkle with almonds. Place baking dish on a rimmed baking sheet and bake until topping is golden brown and fruit juices are thick and bubbling, 50–60 minutes. Let cobbler sit at least 20 minutes before serving. Serve with ice cream.

Notes

You can substitute the fruits easily. Use 3 pounds totally of whatever fruit you enjoy - peaches, cherries, plums, strawberries, or a combination of a few fruits.

  1. You are brilliant! One of our favorite cakes is basically just almond paste and eggs. Never would have dreamed of using it in a cobbler. Cannot wait to try it out. We are finally getting local peaches and berries here. Perfect with the almond paste. 🙂

    • I got the idea from a Frog Hollow Farm Recipe in Bon Appetit so they are the brilliant ones but I do LOVE almond paste too! I have this recipe for a Spanish tart that is basically almond paste and eggs and it is a favorite for sure!

    • I love almond paste too! Have you ever had a almond horn cookie? If not you would love them! They are at most French Bakeries. I need to make some at home.
