One Handed Recipes for New Moms– A series of recipe ideas for new moms and other busy folks trying to eat healthy without a lot of effort. Today’s Recipe: Beet, Banana, and Raspberry Smoothie
Mama: Julia, mother of 3 kids ages 7, 4, and 2
Julia is just as dynamic as the vibrant pink smoothie she created. As a mother of 3, many come to her for motherly advice. And if she can get her kids to enjoy a beet smoothie, she’s worthy of seeking advice from. She enjoys eating fresh foods from CSAs, canning the fresh flavors of summer, and even has her own chickens in her back yard. When she’s not loving on her three kids she is working part time in astro physics. I’d say she’s pretty incredible!
What she enjoys most about being a mom: ‘I love realizing that my baby is her own person and knowing that I get to form a special and unique relationship with her. I am caring for a new person!’
What surprised her most becoming a mother: ‘Becoming a mother brought me face to face with my own selfishness and how much I like my own comfort. It’s hard to see that ugliness in yourself – that feeling that I deserve something more than a life of service and care.’
New Mom Recipe & Tips: ‘When I had my first child I remember many hot summer days with no AC and lots of ice cream, now, I cool off with a smoothie, which I share with the kids. Having older kids, I save the un-eaten parts of their bananas to throw into smoothies. We have a bag of banana chunks in the freezer waiting to be used in smoothies. My other breakfast/ lunches are a combination of these: avocado smashed on toast, mini frittatas (baked on the weekend then enjoyed through the week), berries with yogurt and nuts, overnight steel cut oats in the slow cooker, or leftovers. I frequently eat leftovers and have even been
known to eat the previous night’s dinner for breakfast the next day.’
Julia's Beet, Banana, and Raspberry Smoothie
- 2 medium beets or 3 small
- 1 frozen banana
- 1 cup frozen raspberries
- 1 cup almond milk
- handful of ice cubes
- Peel beets and cut into large chunks. Toss everything into a blender and blend until smooth.
