Quinoa with Asparagus and a Fried Egg

This is an everyday kind of recipe, one you make on a busy evening or when you don’t have the energy for creating a more extravagant meal.  Simply prepare quinoa, sauté asparagus and top with a fried egg, the rest is just details.  And really you can make this recipe with the addition of any seasonal vegetable that you have on hand, it doesn’t have to be asparagus.  The key is adding the egg on top, which amps up flavor, and gives the dish a boost of protein (which I’m always looking for these days!)

Josh and I love to walk over to this little market and grab a couple special sodas and soup for a leisurely weekend lunch.

Quinoa with Asparagus and a Fried Egg

Total Time: 30 minutes

Yield: 4 servings

Ingredients

  • 1 cup quinoa
  • 2 tablespoons olive oil
  • 1 bunch of asparagus
  • zest and juice of 1/2 lemon
  • 2 cloves of garlic
  • 3 large green onions
  • 4 eggs
  • Toasted pine nuts
  • Fresh oregano
  • Salt and pepper

Instructions

  1. Wash your quinoa under cold water. In a medium sauce pan bring 1 cup of washed quinoa and 2 cups of water to a boil. Bring down to a simmer for 20 minutes. Toast your pine nuts in a skillet just until browned. Set aside.
  2. After the quinoa has cooked for 10 minutes or so, sauté your asparagus and chopped garlic in a large skillet. Squeeze and zest half of a lemon over the asparagus. Add the green onion then Add your cooked quinoa to the skillet. Scramble it all together. Salt and pepper.
  3. Meanwhile, fry your eggs however you like them. Throw everything in a bowl and top with a fried egg, oregano and pine nuts. Salt and pepper to taste.
  4. Serve with ricotta spread over toast with drizzled olive oil and salt and pepper.

  1. I just made quinoa with asparagus last night for dinner with these exact flavors (lemon, garlic, thyme, oregano)! Along with the asparagus and greens onions, I added corn and crumbled feta. Topped mine with lemon and herb chicken but the eggs are such a great idea.
