Maple Peanut Butter Cookies

A refined sugar-free peanut butter cookie that still tastes like a real treat!

Ingredients
  

  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 1/4 cup pure cane sugar or maple sugar
  • 1 egg
  • 2 tablespoons maple syrup
  • 1 cup creamy peanut butter
  • 1 vanilla bean, seeded or 1/2 teaspoon vanilla extract (I use Rodelle)
  • 1 1/3 cups oat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt

Method
 

  1. Cream together the sugar and butter. Add in the egg then and mix until incorporated. Add maple syrup, peanut butter, vanilla bean seeds.
  2. In a separate bowl mix together the oat flour, baking soda and salt.
  3. Mix the dry ingredients into the wet, just until incorporated. Don't over mix.
  4. Bake at 350 for 10-12 minutes
