Herbed Chicken Salad Melts

These Chicken Salad Melts are a comforting twist on chicken salad is perfect for fall lunches or easy dinner.

Ingredients
  

  • 4 slices sourdough bread
  • 3/4 lb chicken breasts, shredded
  • 3-4 tablespoons mayo*
  • 1/4 teaspoon salt
  • 3 grinds fresh pepper
  • 1 teaspoon herbs, tarragon or basil are my favorite
  • 4 slices colby jack cheese

Method
 

  1. Slice 4 thick slices of bread and set out on a baking sheet. Preheat oven to broil on high. Set a rack on the top shelf. 
  2. Combine chicken with mayo, salt, pepper, and herbs. Spread the chicken salad over the bread. 
  3. Top each with a slice of cheese and slide the baking sheet under the broiler for 3-5 minutes or until cheese starts to get bubbly and lightly brown. 
  4. Serve warm alongside a green salad. 

Notes

I always use real mayo, check the ingredient list for any added or unknown ingredients. I often time make my mayo at home too.
