  • 1 cup Bob's Red Mill almond flour
  • 1 cup Bob's Red Mill buckwheat flour
  • 1/3 cup dutch baking cocoa
  • 1 teaspoon baking powder
  • 1/6 teaspoon salt
  • 1/3 cup mini dark chocolate chips, or finely chopped chocolate
Ganache
  • 1/2 cup dark chocolate chips

Method

  1. Preheat the oven to 350 and grease a regular sized loaf pan.
  2. In a medium bowl use a fork to whisk the eggs.  Add in the coconut sugar. Add bananas and mash well using the fork. Add in oil.
  3. Add in all of the dry ingredients and mix just until combined.
  4. Spoon out 2/3 of the batter into the prepared loaf pan. Sprinkle with the chocolate chips then top with the remaining batter.
  5. Bake for 40-45 minutes or until a toothpick comes out mostly clean (there will be melted chocolate in the center from the chocolate chips.

  7. Slice and serve!
