Method
- Preheat the oven to 350 and grease a regular sized loaf pan.
- In a medium bowl use a fork to whisk the eggs. Add in the coconut sugar. Add bananas and mash well using the fork. Add in oil.
- Add in all of the dry ingredients and mix just until combined.
- Spoon out 2/3 of the batter into the prepared loaf pan. Sprinkle with the chocolate chips then top with the remaining batter.
- Bake for 40-45 minutes or until a toothpick comes out mostly clean (there will be melted chocolate in the center from the chocolate chips.
- As the loaf cools, make the ganache. In a small sauce pan over low heat, melt the chocolate with the coconut cream. Stir continuously as it melts. Pour this thick warm ganache over the loaf.
- Slice and serve!
Notes
You may use coconut milk instead of the cream.
