Gingerbread Waffle Recipe

These gluten free Gingerbread Waffles are perfect for Fall.

Ingredients
  

  • 1 1/2 cup almond flour*
  • 1 1/2 cup brown rice flour*
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 tablespoons brown sugar
  • 1 teaspoon ginger powder
  • 1/2 teaspoon cinnamon
  • 4 eggs
  • 1 1/2 tablespoon molasses
  • 1/2 cup plain yogurt
  • 1 very ripe banana, mashed
  • 1/2 cup skim milk

Method
 

  1. Combine dry ingredients together.
  2. Add wet ingredients and stir or whisk until well combined.
  3. Spoon batter onto a waffle iron.
  4. Serve with pear butter and warm maple syrup.

Notes

These waffles can be gluten free or not. Replace the the top two flours with all purpose flour for non-gluten free.
