Chopped Salad Recipe with Tomato, Avocado, Pears, and Kumquats

Ingredients
  

  • 1 cup cherry tomatoes sliced in half
  • 1 pear chopped
  • 1/2 cup kumquats seeded and sliced (or used candied orange peel)
  • 1 avocado chopped
  • 2 green onions chopped
  • 1/2 cup candied mixed nuts, see below recipe
  • a few handfuls of greens optional
dressing:
  • 1 lemon, juiced
  • 1/4 cup grape-seed oil
  • 1 teaspoon grated ginger
  • 1/2 teaspoon lemongrass paste
candied nuts:
  • 1 cup mixed nuts
  • 1 tablespoon water
  • 3 tablespoons sugar
  • dash salt
  • dash cinnamon
  • dash cayenne or red pepper spice

Method
 

for candied nuts
  1. Combine water, nuts, and sugar in a pan over medium high heat. Stir using a wooden spoon until the sugar crystalizes (about 5 minutes). Add in salt, cinnamon and spice. Lay out on parchment paper to cool.
for the salad
  1. Chop everything. Whisk together dressing. Toss everything in the dressing and serve!

Notes

The salad we had at the dinner had candied orange peel but the sweetness of kumquats is a good substitute if you don't have time to candy orange peel from scratch.
