Annalise's Quinoa and Roasted Vegetable Salad
An easy quinoa salad with roasted vegetables, perfect for a quick weekday lunch.
- 1 cup cooked quinoa
- 1 bag of lettuce greens
- lemon infused olive oil or your favorite vinaigrette dressing
- roasted vegetables, sweet potatoes and beets etc
- cottage cheese
- sunflower seeds
Toss enough greens for a single serving with a teaspoon of the lemon oil or any salad dressing. Top with quinoa, vegetables, cottage cheese and seeds.
