Chopped Salad Recipe with Tomato, Avocado, Pears, and Kumquats
A Chopped Salad recipe with tomatoes, pear, avocado, kumquats, and nuts.
1cupcherry tomatoessliced in half
1/2cupkumquatsseeded and sliced (or used candied orange peel)
1/2cupcandied mixed nuts,see below recipe
a few handfuls of greensoptional
dashcayenne or red pepper spice
for candied nuts
Combine water, nuts, and sugar in a pan over medium high heat. Stir using a wooden spoon until the sugar crystalizes (about 5 minutes). Add in salt, cinnamon and spice. Lay out on parchment paper to cool.
for the salad
Chop everything. Whisk together dressing. Toss everything in the dressing and serve!
The salad we had at the dinner had candied orange peel but the sweetness of kumquats is a good substitute if you don't have time to candy orange peel from scratch.
