Muesli is like an unsweetened, dry cereal-like version of oats or granola. Instead of buying it at the store, try making this homemade muesli recipe and saving a few bucks, plus it tastes better I promise! Even the most skeptical oat eaters in my house enjoyed this muesli breakfast. Mix it up in a jar with yogurt and honey or a flavored kefir for a great on-the-go breakfast in a jar.
Does your spouse ever surprise you? Not like jumping around the corner to scare you kind of surprise but when you learn something new about them that is kind of perplexing. Josh never ceases to surprise me. Ever since I’ve known him he’s not been fond of oats (except for like a one month period of strangeness). And oats are one of my favorite weekday breakfasts! How could he not like oats?? Every time I make them I get Josh to try a bite just to see if he likes this new version, and 99% of the time his conclusion is the same, “no, I still don’t like oats.”
So, you can imagine how surprised I was when he came home one day and said he had the most delicious muesli at a local coffee shop in town. My reply, “You like muesli?! You know muesli is just raw oats right?” One thing is for sure about my Josh, he is a man who knows what he likes. He replied with something like, “I don’t know what was all in it but I liked it.” I then began to pester him with a lot of questions, like was it sweet, were there nuts and fruit with the mixture? He didn’t have all of the answers but I got enough to try and make them at home for him.
Finally, we found an ‘oat recipe’ that we both enjoy. His might include a few extra squeezes of honey on top and mine might be in a jar to eat on the go, but we both like it and the recipe is perfect for weekday mornings.
This specific recipe has no sugar, so we top it with honey or mix it with sweetened yogurt. Also, the oats are toasted just for a few minutes, to add a more nutty flavor to the mixture. I add my favorite nuts and dried fruit- hazelnuts and sun dried cherries, but feel free to improvise. I’ve also been sampling kefir for breakfast lately and love it with this. Kefir is high in probiotics and antioxidants and is thicker than milk but thinner than yogurt. This blueberry, pom, acai kefir from Green Valley Organics is my favorite flavor thus far.
Try homemade muesli for a sugar-free alternative to granola.
- 1 cup rye flakes
- 1 1/2 cups old fashioned rolled oats
- 1/2 cup wheat bran
- 1/2 cups dried cherries, currants, or dates
- 1/2 cup hazelnuts
- 1/4 cup pumpkin seeds
- 1/2 teaspoon flax seeds
- 1/2 teaspoon chia seeds
- 1/4 teaspoon cinnamon
- yogurt or kefir and honey to serve
Preheat the oven to 350 degrees. Lay hazelnuts on a rimmed baking sheet and toast until fragrant, about 5-7 minutes. Remove from the oven and allow to cool just a few minutes. Using a dish towel, rub nuts until the outer skins start to loosen. Set skinned hazelnuts on a cutting board and roughly chop.
Spread the rye flakes and rolled oats onto another baking sheet. Bake for about 12-15 minutes, stirring two or three times prevent burning.
Scrape the toasted and chopped hazelnuts, seeds and grains into a large serving bowl and add the wheat bran and dried cherries. Mix together. Serve over yogurt or kefir, drizzled with honey. Store leftovers in an airtight container.
For a more traditional muesli, serve this with granny smith apples and mix the muesli into the yogurt or kefir for 30 minutes to 12 hours before eating. Recipe inspired by the Kitchn
