Healthy Maca Milk Shake

Haven’t heard of Maca yet??!  Well I hadn’t either until I visited a healthy food cafe a few years back.  They were boasting about their healthy milkshakes and I was easily persuaded. When I asked the gal at the register what maca was she described it as being nutty in flavor, almost tasting like butterscotch.  Maca is a Peruvian root vegetable that is now commonly found at health food stores in a powder form. You can use it in things like shakes or smoothies to make a creamy drink that also has the benefit of reducing anxiety, boosting energy levels and balancing hormones.

While many of you were getting into ‘summer shape’ the last few months I was doing the opposite, eating really really well at culinary school then returning home to either practice what I was learning or grab takeout. Now, I’m catching up by gobbling up refreshing summer salads and smoothies.  This Maca Shake is the perfect indulgence for light summer eating.  The butterscotch flavored shake fools my brain into thinking I’m having something rich while I’m really beefing up on healthy ingredients like bananas, almond milk and maca.

Maca:

Maca is a plant grown in Peru relative to the radish with a taste similar to nuts or butterscotch.  Its high in protein and minerals like calcium and potassium as well as trace minerals like iron, iodine and magnesium.  When eating maca many feel a boost of energy.

One tip to this recipe, and to any healthy milkshake you make at home, is to use frozen bananas.  Simple slice up over ripe bananas (like the kind you might use for banana bread) or even the odds and ends from when your kids don’t eat a whole banana, and place the slices in a bag in the freezer.  The frozen banana pieces turn into a creamy, ice cream-like, texture when blended.  Add some almond milk, and a few other ingredients and you have a whole new healthy milkshake routine!

Unfortunately, the cute little healthy food cafe I first tried this shake is no longer in business but the owner delighted me in sharing his recipe.  He also mentioned that the beloved shake is now served at one of his other restaurants, Sage’s Cafe. So if you’re in Salt Lake, go give it a try!

Maca Shakes

A healthy milk shake made with frozen bananas and almond milk then enriched with maca root powder.
Prep Time 5 minutes
Total Time 5 minutes

Cuisine vegan
Servings 2 servings

Ingredients
  

  • 2 cups frozen bananas chopped
  • 1 cup alternative milk, soy, hemp, or almond
  • 2 tablespoons Maca powder
  • 1 tablespoon agave syrup, optional
  • 1 teaspoon vanilla extract

Instructions
 

  • Place all ingredients into the blender and blend until smooth.

Note from the Chef at Vertical Diner - This shake is wonderful with the addition of soaked goji berries and/or raw cocoa.
**These ingredients can be bought in bulk from Cali’s Natural Foods during business hours of 11am-6pm Friday and Saturday at 389 west 1700 south.

    • Letty, I think you will love Maca! I’m seeing it more and more now. I think I even saw a small (1 serving) package in the checkout line at Sprouts. Though I would definitely suggest Cali’s for buying it in bulk 🙂 Let me know if you find some other fun uses for it! So far I’ve only made these shakes.
