As I continue my quest for more fresh recipes, I thought I’d share with you a few farmer’s market salad recipes that I’ve come up with:
Farm Salad with Goat Cheese Croutons – includes green beans, tomatoes, and potatoes (pictured above)
Quinoa Salad for a Crowd– includes cucumbers, radishes, plums, purslane and parsley
Greek Salad – includes red onion, green pepper, tomato, cucumbers, basil and oregano
Simple Kale Salad – includes kale, carrots, cucumbers, broccoli, and sprouts
Roasted Beet and Hazelnut Salad – includes beets and arugula
Zucchini Noodle Salad with Spicy Peanut Sauce – includes zucchini, carrot, and a cayenne pepper
Apricot Couscous Salad – includes apricots and fresh herbs
Stone Fruit and Burrata Salad includes fresh basil, cherries, peaches, nectarines, and plums
Kale and Coconut Chicken Salad – includes fresh kale
Cauliflower Couscous Greek Salad – includes Cauliflower, bell peppers, cucumbers,lettuce, onion, and fresh herbs
