End of Summer Strawberry Bread and new neighbors

So, I am a complete dork and wanted to meet my new neighbors and couldn’t think of anything to do for them besides baking them something. So, like susie homemaker I found a good recipe for strawberry bread and walked it over to their homes. Actually I walked it over several times because the girls north of us are never home. Finally (a few days later) I brought over the now 3 days old bread. It still smelled delicious and looked fresh so I hope is was enjoyable. I found this classic Strawberry Bread recipe in my cookbook that my mom had hand written out for me. I’m not sure where she found it…I don’t think she ever made it growing up? But I’m glad to have it now because I think I’ll be making it more than once!

We are enjoying both of the neighbors we’ve met. On one side there’s a Polynesian family with 8 kids! We’ve completely fallen in love with youngest three of the kids – George, Melissa, and Vinnie. George really likes ‘Dosh’ (George’s pronunciation of Josh) and follows him around asking if he can help with any house stuff. Apparently the couple who lived in our house before us would bring George around town with them so now he’s really interested in being our friend as well. Maybe we’ll take him for coffee or something (obviously I know nothing about small children!). To our other side, the 5 girls seem really nice, although I think they thought it was a bit weird that I brought over food to them. I’m okay with that because they have astro-turf lawn, so we even out in weirdness.

Strawberry Bread

INGREDIENTS
3 c flour
1 tsp salt
1 tsp baking soda
1/4 tsp cinnamon
1 3/4 c sugar
1 large container of frozen strawberries
4 eggs
3/4 c oil
1 c chopped pecans

DIRECTIONS
Mix first 5 ingredients in a large bowl. (Side note: You can purchase frozen whole strawberries and thaw then process them in a blender OR you can purchase the frozen strawberries that already come blended.) Next, mix the rest of the ingredients in a smaller bowl. Spray two loaf pans and set oven to 350 degrees. Mix the two bowls of ingredients and pour into greesed baking pans. Bake for 1 hour. If you use mini muffin pans bake for 15-20 minutes.

  1. Sounds like just the recipe I have been looking for. However, my strawberries came strait from the garden, so I need some kind of measurement for a “large container”. Please email soon, I can’t wait to try this out!

    • Joy, thanks for pointing that out! This recipe was from my early years of blogging and I wasn’t really exact on my measurements!! It would be 1 1/2 cups once its chopped. Hope that helps.
