Time simple doesn’t exist when you have a sick kid. Last week, the week of her birthday, Ruthie was sick.  So sick she landed herself in the ER one evening.  Days of high fevers and miserableness seem to all blend together.  We got sleep when we could during the day even when my 4 year old was watching cartoons. We were in survival mode. I held my sweet one close and gave her everything she could need, praying for some reprieve from whatever virus she had caught.  Finally, we saw a light at the end of the tunnel, waking up one morning and it was Thursday… I hadn’t done even a pinch of work or cleaning. Time had returned, and so had her sweet smiles along with her still sweet tenacity to push food from our hands that she doesn’t want.

This experience that took me to a space remove from time reminded me of a year ago when I was pregnant with little Ruth. I was overdue by two week and though I counted every day past my due date, they also seem to all run together. My sole focus then was starting labor and everything else was put on the back burner.

Everyone loves these Coconut Popsicles and they just happen to be vegan and dairy-free too!

Once evening I set out on a walk, trying to get labor started.  A friendly and stately man commented on my girth (saying something like ‘whoa girl’). I gave him a little nod, like yep I know I’m big a pregnant!  He must have seen the look on my face because he waved down an ice cream truck that was circling the park and insisted on me choosing a popsicle on his dime. I randomly chose a coconut popsicle, thanked the man, and continued my walk now with a popsicle in hand.

I’ll forever remember that funny guy at the park who at first chuckled at me then gave me pity in the form of a popsicle.   And I’ll remember circling the park, not letting a drip of that popsicle get away as I waited one more Summer night away for my sweet girl to arrive.

Parenthood often gives us experiences that remove us from time or place. Hardships of sickness, or the pain of learning more patience. A popsicle in hand, always helps. These Coconut Popcicles will forever take me back to that late Summer night in August 2016.

For all popsicles lovers.. these dreamy Coconut pops are dairy-free and vegan but still super creamy!

 

Dairy Free and Vegan Coconut Popsicles

These dairy-free and vegan coconut popsicles are ones everyone will love.

Ingredients
  

  • 1 can coconut milk, full fat
  • 1 can coconut cream
  • 1/4 cup sugar, for sweeter pops use 1/3 cup
  • 1/4 cup unsweetened shredded coconut
  • pinch sea salt

Instructions
 

  • In a medium saucepan heat up the coconut milk, cream and sugar. Bring to a simmer and cook until sugar dissolves (3-4 minutes). Remove from heat and use a whisk to stir in coconut and sea salt. Break up any bubbles of coconut cream with the thick until the mixture is mostly smooth.
  • Pour the coconut mixture into 8 popsicle molds. Freeze for 2 hours or until frozen through.  
  • Remove from molds by placing the mold into running hot water for a few seconds. Then slide out from the mold
  • Store the unfolded pops in a freezer safe bag in the freezer for up to two months. 

Hot days call for these cool and creamy Coconut Popsicles made with coconut milk so they're dairy free and vegan.
