Everett loves having a part in making our limeades.  He’s always picking mint and bringing it inside asking for us to make limeades.  Besides harvesting the mint from the garden and garnishing each glass with a little sprig, Everett’s role in our drink mixing is also helping juice the limes.  I make the simple syrup, then we add in some water and wahlah, they’re done.  So easy a toddler can make them!

We took a pitcher of this with us over to a friend’s house for dinner but of course you could keep it in your fridge for a few days of refreshment as well!  Hope you and your family enjoy these limeades as much as we do!

Rhubarb Mint Limeade Recipe

Easy Mint Limeade Recipe using Rhubarb for extra flavor!


  • 1/2 cup lime juice (about 5-7 limes)
  • 1 cup water, plus 4 cups
  • 1/2 cup sugar or honey
  • 2 stalks of rhubarb
  • mint for garnish


  1. Slice on the the rhubarb stalks into 1 inch pieces. Bring water, sugar or honey and sliced rhubarb to a simmer and cook just until sugar is dissolved (about 2-3 minutes). Pour the simple syrup into a pitcher along with 4 cups of water and the lime juice. Refrigerate for 1 hour or until ready to serve. Serve the limeade garnished with mint, extra lime slices, and use the extra stalk of rhubarb (sliced into 4 equal parts) as a stir stick of sorts.
