Today’s Almond Butter Pie Recipe is brought to you by Harmons Grocery Store.  I am proud to be one of their partnered bloggers for the 2015-16 season. I’m teaming up with all of the Harmons Bloggers to provide you with the best pie spread yet. My recipe inspiration today comes form my love of peanut butter pie. Though we will of course have our staple pies this holiday season like my grandma’s chess pie and my sweet potato-pumpkin pie, this year I wanted to try one new recipe so I took a classic peanut butter pie recipe that I  have made before and I used almond butter and marcapone cheese instead of peanut butter and cream cheese. And the result… oh my!!  This may be my best experiment yet!

The filling in this pie is absolutely dreamy… light and creamy, salty and sweet. One of the gals the morning we did the photo shoot with our pies decided my pie was like a giant buckeye and that’s just about right.  Harmons makes almond butter in house that is just perfect for spreading on toast, eating by the spoonful, or for mixing into something as decadent as this pie.

My job is so good.  As a recipe developer and food writer I’m at the grocery store a lot and lucky for me my local grocery store is more like an upscale designer food mall.  I could literally walk the isles of Harmons for hours entranced at all of the colors and organization. What’s also awesome about my partnership with Harmons is that I get to join join a small community of other local bloggers whom I have thoroughly enjoyed getting to know. I want to introduce these incredible women and all of their pies to you today.

First comes Si who blogs at A Bountiful Kitchen.  She not only shares family tested and approved recipes but she also shares her love for family through her blog.  She has and is raising a full family of 4 kids, some of her which are grown with kids of their own.  And if you met her kids, and I have, then you would also know that their mom is something special.  So, I’m taking notes not only on her family recipes but on her wisdom of motherhood. She hosts fun parties and always seems to have something fun planned for her family whether its skiing in the winter or hay rides in the fall. And if you’re a macaron fan, Caroline is your girl.  She doesn’t just make macarons for fun now and again, she teaches how to make these delicate treats at a local cooking school. Jesseca from One Sweet Appetite has been warm and friendly since the day I first met her. Every time I see her I feel encouraged by a word she said or something she did. She’s also a hard working gal. Since first meeting her not only has she been blogging as well as being a mom, she also has had a part time job.  Moms always amaze me but this mama especially so! She is as sweet as the title of her blog suggests.  Today Jesseca shared her Streusel Pumpkin Pie.

Almond Butter Pie

This recipes gives the classic peanut butter pie gets a makeover with almond butter and mascarpone cheese! A must try this holiday season.

Servings 8 slices

Ingredients
  

  • 1 1/4 cups cookie crumbs, from biscotti cookies or gingersnaps
  • 3 tablespoons unsalted butter, melted
  • 1 cup + 1 tablespoon heavy cream
  • 8 ounces mascarpone cheese,* at room temperature
  • 1 1/4 cups creamy almond butter, I like to use salted for this
  • 3/4 cup packed light brown sugar
  • 2 teaspoons pure vanilla extract
  • 1/2 cup dark chocolate chips

Instructions
 

  • Preheat the oven to 350°F.
  • In a bowl, stir together the cookie crumbs and melted butter; press into the bottom and sides of a 9-inch pie dish. Bake until brown, about 8-10 minutes. Set aside to cool completely.
  • With a heavy-duty stand mixer fitted with the whisk attachment, whisk the cream at high speed until it forms stiff peaks. Transfer to a large clean bowl and set aside.
  • Fit the stand mixer with the paddle attachment and a clean bowl; add the mascarpone cheese, almond butter, brown sugar, and vanilla and beat at high speed until the mixture is smooth and silky.
  • Gently fold the almond butter mixture into the whipped cream with a spatula until completely blended. Spoon into the cooled pie shell and smooth out the top. Place the pie in the freezer.
  • Melt 1/2 cup of dark chocolate over low heat or in a double boiler. Stir as it's melting to make sure no chocolate burns to the bottom. Stir in 1 tablespoon of heavy cream. Pour this onto of the pie and gently spread with a spatula. Place the pie back into the freezer.
  • Freeze the pie for 1 hour or until ready to serve (if you are going to leave it in the freezer awhile, wrap it in plastic wrap after 1 hour so it doesn't get freezer burn).
  • Take the pie out of the freezer 15 minutes before serving. Slice it and enjoy!

Notes

Cream cheese can be used if you can't find mascarpone.
