I honestly don’t have to much to say about this classic coconut cream pie.  It was perfectly delicious, and enjoyed with  some of our best friends, so even better.  It’s a classic and everyone should make the classics. All of the simple ingredients, no fuss, perfect results.  The classics, like this yellow cake, this peach pie, this chocolate pudding, or these brownies, they don’t need a season or a holiday even, but just an occasion for celebration.  While this pie would be perfect for Christmas it’s also perfect for just about any gathering.

On Silent Nights

Since you don’t need much more reason or explanation behind this pie, I wanted to share a little with you today about silence.  I shared a few weeks ago about the quiet moments as I rock Everett to sleep at night but I’m also finding peace in the quiet moments of my marriage.  In the earlier years I would try and fill any awkwardly quiet moments with chatter- questions, digging to learn more or connect more, communicate better or laugh louder. Now, I’m finding the silence to be not awkward at all and its even comforting at times. I gave up the fear of being that awkward couple having dinner in silence and am trading it in for peace over our relationship.  Quiet moments in a relationship doesn’t have to be bad; these moments can actually be quite good. Here are two examples:

One of the best moments of our marriage this past year was when we took a short trip to California to visit some friends. We reserved our car rental online, finding the cheapest option available.  When we arrived to pick up our car we walked out to the parking lot number assigned to us to find that our match for the week was a tiny mint green fiat.  At first we laughed then it got a little more serious as we tried to squeeze our luggage and toddler loaded car seat in.  Was this safe? I sure hope so because that’s how we explored San Francisco that week!

Our quiet moment came days later when our friends offered to take Everett for a few hours and let us have an evening to ourselves. We hopped in the spearmint fiat, windows down, and my seat pushed comfortably back where my knees weren’t hitting the dashboard for the first time this trip.  The only connection to our phones was through the car radio where we turned up some tunes as loud as we could handle.  We drove from the coast to the vineyards, not talking at all, literal – wind in our hair and music blaring. It wasn’t exactly silent but we weren’t talking.  We didn’t need to say anything. We just enjoyed the breeze, being together, and a short adventure, just the two of us.

I don’t remember anything that was said of any importance during that couple of hours.  I remember letting our guards down and receiving some peace and pleasure of just being in that moment together.

My second story of silence was more recent.  It was one night after I had put Everett to bed. On most weeknights we usually only have the energy to sit on the couch together for a show or two before crashing in bed but on this evening Josh was listening to some worship music. Instead of asking what show we had to watch that night I just came and sat next to him. No questions, not even a, “How was your day?” We just sat, listening to music together.  I remember the words being encouraging and uplifting at the time though now I can’t recall them.  I let my eye lids slowly relax as we listened together for what could have been hours or minutes.  I went to bed with more peace than I had in days or maybe months and yet we hadn’t really said a word to each other.

Sometimes good communication is overrated. I used to think it was always best to talk through things and while I still think you should not let things build up in your marriage, I now also see the value in letting things go and enjoying the quiet. See if time helps heal and silence may bring you together. Try on silence with me this season and see how it feels.  I hope you have some peace filled moments too!

Classic Coconut Cream Pie Recipe

A classic recipe for Coconut Cream Pie to be enjoyed on any occasion.

Cook Time 20 minutes

Ingredients
  

  • 1 standard pie crust, pre baked
  • 2 cups milk
  • 1/3 cup sugar
  • pinch salt
  • 1/4 cup flour
  • 6 large egg yolks
  • 1/2 cup coconut flakes
  • 1 teaspoon pure vanilla extract, divided in half
  • 1 tablespoon butter

whipped cream topping

  • 1 cup whipped cream
  • 1/3 cup powdered sugar
  • 1/4 cup coconut flakes toasted

Instructions
 

  • In a medium pot, bring milk, sugar, and salt to a simmer.
  • Slowly add in the flour, whisking as you sparkle flour over the top of the milk.
  • In a medium bowl whisk together the egg yolks. Add 1/4 cup of the milk mixture to the yolks and whisk. Do this 2 more times adding 1/4 cup of the hot mixture to the eggs at a time. Once yolks are tempered (brought up to temperature but not scrambled) add them back into the pot over medium low heat. Stir constantly until the custard is thick (5-10 min).
  • Stir in the 1/2 teaspoon of vanilla, butter and flaked coconut (3/4 cup).
  • Remove from heat, stirring occasionally until cooled.
  • Meanwhile, whip up the cream in a stand mixer. Once soft peaks have formed in the cream add the sugar and continuing whisking until stiff peaks.
  • Pour cooled coconut cream in to the pre-baked pie shell. Top with whipped cream and sprinkle with toasted coconut.
