Anastasia and I have had many long talks while walking our boys at the park. We chat about how to continue making healthy food from scratch as a new mom. In Russia, she says most all new moms continue cooking even as they transition into motherhood. New moms in Russia often make soups, grains with fruit or vegetables, or salads- because they are the easiest to make from. Anastasia often plans what she wants to get done the night before and then tries to take care of those tasks during her son’s morning nap. She’s a super mom to me!!

New Mom Recipe & Tip: Millet Kasha with Dried Apricots. (Kasha is a common porridge like breakfast in Russia that can be made with a variety of grains like buckwheat or millet). What’s beautiful about the many grains used in Russian cooking is not only are they healthy but they are cheap and used for more than just cooking. Anastasia shared with me how you can use grains for art projects, help children as they start to develop their sense of touch by letting them feel different grains, or throw some in a can for a simple rattle.

What she enjoys most about being a mom: ‘Some people go see Niagra Falls or New York City but I get to see every little change in my son that only happen once. Witnessing his first smile is better than

any site in the world.’

What surprised her most becoming a mother: ‘No book can ever prepare you for becoming a mother.’

Breakfast Millet Kasha Recipe with Dried Apricots

Apricot Millet Kasha Recipe

A warm and comforting easy breakfast of millet and dried apricots.

Ingredients
  

  • 1/2 cup millet, rinsed and drained
  • 1/2 cup dried apricots, soak in hot water (any fruit or dried fruit works)
  • 1 1/2 cups milk, or almond milk
  • 1 tablespoon brown sugar
  • 1 tablespoon butter or coconut oil
  • pinch of salt
  • water

Instructions
 

  • Cover dried apricots in hot water and leave to soak while you cook the millet.
  • Rinse millet to prevent and bitter flavor in the grain (we did this by pouring water into the pot then simple using the lid of the pot to drain the water out, trying not to lose any grains). Cover the rinsed millet with water (doesn't matter how much because you'll drain it after it cooks). Bring the millet and water to a boil, then simmer for 10 minutes. Drain excess water (you don't have to get all of the water out but just the majority of it).
  • Heat the milk over medium heat then add milk to the millet. Bring the millet and milk back to a boil then simmer for 10 minutes.
  • Meanwhile, chop the soaked apricots.
  • Once millet is done cooking with the milk, cover and let sit for 5 minutes. Stir in apricots and enjoy!

Notes

!Quicker Cooking Method Bring 1 3/4 cup water, 1 cup milk, and 1 cup millet to a boil then simmer for 20-25 minutes. Stir in fruit or nuts!

  1. My mother used to make similar dish only with pumpkin. It should be really dark, sweet pumpkin, that was cubed and added raw from the beginning. I now make it for my children and they love it.
