Gingerbread Waffle Recipe

I love having a close friend over for a special breakfast. I recently spoiled my girl friend, Amanda, who had just returned from Haiti with these gluten free gingerbread waffles, smeared with pear butter and maple syrup. With lots to catch up on we slowly enjoyed every bite of our homemade waffles and leisurely sipped our coffee.

We had taken a trip to Haiti together in February but she returned alone for a week this summer. This trip was one in which things occurred which I can hardly fathom. On the first day Amanda was there, she along with our friends who live there, came upon a bus wreck, a bus filled with over 70 people. They were the first people with medical training to the scene. What they saw and experienced on that day is way beyond any suffering most of us will have to experience in our lifetime.  You can read my friend’s story here and a story by one of the other gals with her here.

The beautiful part of this story is that because they were there people were rescued. Bus crashes to this magnitude happen more often than we in America can imagine. People are crammed into buses everyday to travel across the country cheaply and the roads are horrific, especially during rainy season.  But that day, because of a number of unforeseen setbacks in their drive, they came upon this crash at just the right time and were able to heal wounds, drive the injured to hospitals, and hold the hands of those whose injuries were beyond help.

Waffles can’t possibly heal the wounds of someone who experienced something as traumatic as this but I think friendships and love are healing. Everyone has there own way of showing love and for me its often with food. I love those around me by cooking for them, bringing them food, or sharing a meal with them. We talk, we listen and we eat. It’s simple but that’s how I know to love.  And that’s how I loved my friend on this fall morning in Utah.

Gingerbread Waffle Recipe gluten free

Gingerbread Waffle Recipe

These gluten free Gingerbread Waffles are perfect for Fall.
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Servings 12 waffles

Ingredients
  

  • 1 1/2 cup almond flour*
  • 1 1/2 cup brown rice flour*
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 tablespoons brown sugar
  • 1 teaspoon ginger powder
  • 1/2 teaspoon cinnamon
  • 4 eggs
  • 1 1/2 tablespoon molasses
  • 1/2 cup plain yogurt
  • 1 very ripe banana, mashed
  • 1/2 cup skim milk

Instructions
 

  • Combine dry ingredients together.
  • Add wet ingredients and stir or whisk until well combined.
  • Spoon batter onto a waffle iron.
  • Serve with pear butter and warm maple syrup.

Notes

These waffles can be gluten free or not. Replace the the top two flours with all purpose flour for non-gluten free.

…and just a little note on this recipe.  These waffles can be made gluten free or just with normal All Purpose Flour. They are delicious and soul warming either way. Enjoy!

  1. Just found your lovely website looking for a muesli recipe. Everything loks delish! Where on earth did you find that cute little pitcher?!

    • It’s an old waffle maker I got from target, the brand is DeLonghi. It actually makes rectangular waffles but I didn’t fill the holes up all the way so they ended up looking more rustic. It’s a thick batter so it makes for a pretty rustic waffle with any maker. Hope that helps!

This may be a random and unrelated question, however would you happen to know where I could find the same jug that holds the maple syrup in your photo? I absolutely fell in love with it and I can’t stop staring at it!! Sorry for the strange question!! I am looking forward to having a look at all your other recipes you have posted 🙂 Thankyou
