Sometimes a thick slice of toast spread with a generous amount of butter and topped with fresh made jam is the perfect ending to a late summer day. Last week I picked up a hearty loaf Stone Ground Bakery's Honey Wheat Bread and a jar of Tagge's Jam from the Utah Food Co-Op's Monday Market Sale. That very day, Josh and I enjoyed our toast and jam as an afternoon snack or the porch with Henry nagging at our feet. While I was at the market earlier that day I also picked up blueberries, blackberries, pluots, chicken, sausage, carrots, purple bell peppers, zucchini, squash, lemons, and a few other things I can't even remember for $25! Today the Co-Op is offering the same deal as last week: Mention SLC Foodie and get $5 off every $30 spent. And because their food is already reduced, you're getting the equivalent of $60 of local groceries for only $25.

I think if Henry and my niece, Sarah, lived in the same city they would be the bestest of pals. The type of friends that you get sick of because you spend so much time together. As we were together this summer, they couldn't get enough of each other. One would chase the other around then the other would take over the chasing. It was a constant circus. A very very cute circus, I might add. As I looked through these pictures I was reminded of what a great summer we had!
Since I haven't done this in a while, I thought I'd also leave you with some of my favorite links lately.

Currently Craving...Porridge & French Press Coffee from The Rose Establishment

As many of you know, I am a sucker for a good bowl of warm oats in the morning (you can tell by my several oatmeal posts here, here and here!) The Rose Establishment serves up some of my very favorite oatmeal in town, which I like to order accompanied by a perfectly brewed french press of course. Today through Sunday the 28th, they are serving up my favorite porridge & press to you for only $5 (hot porridge w/ steamed milk and seasonal fruit, served with our french press house coffee). And if you're not a fan of porridge, they are also offering a latte with home-made vanilla syrup and a tea cookie for $4. Mention the SLC Foodie deal to get this special. Wheat Berry Salad Recipe with Bacon, Pecans, Spinach & Sun-dried Cherries

Ya'll, this Wheat Berry Salad is soo good! I could hardly wait to share it with you. It has so many amazing flavors with the bacon, sun dried cherries, toasted pecans, and shallots. If you've never tried wheat berries before I implore you to give them a shot. They have a very fun crunchy texture and take on much of the flavor of the other ingredients around them, plus they are a healthy grain, high in dietary fiber.
I made this salad first for a light dinner for Josh and I, and was shocked when not only did I love it but he loved it as well. Maybe it was the bacon. Either way, its great to find a healthy recipe that we both enjoy. I have made it several times since and most recently made it for a wedding shower that I threw for a dear friend. I'll be sharing the rest of the recipes from the shower later this week so stay tuned!
Wheat Berry Salad with Bacon and and Sun-dried Cherries
adapted from Real Simple
INGREDIENTS
1 cup wheat berriesKosher salt and black pepper
1/2 cup pecan halves
3 slices bacon (omit for a vegan version)
1/2 cup dried cherries
1/3 cup fresh flat-leaf parsley
2 shallots, thinly sliced (or green onions)
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
DIRECTIONS
In a large saucepan, combine the wheat berries, 4 quarts water, and 1 teaspoon salt and bring to a boil. Cook until tender but still slightly chewy, 50 to 60 minutes. Drain and rinse with cold water to cool. Transfer to a large bowl.

Meanwhile, heat oven to 350° F. Spread the pecans on a rimmed baking sheet and bake, tossing occasionally, until fragrant and toasted, 6 to 8 minutes. Let cool, then roughly chop.
Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp, 6 to 8 minutes. Transfer to a paper towel-lined plate. When cool, crumble and add to the wheat berries, along with the pecans, cherries, parsley, shallots, oil, lemon juice, and ¼ teaspoon each salt and pepper. Stir gently to combine.

Strawberry Tomato Sauce Recipe & A Vintage Mixer Cooking Class

Strawberries Tomato Sauce. I know what you're thinking. A strange combination, right? But in perfect balance, a sweeter tomato added to the strawberries just gives this sauce a rustic and earthy flavor that you can't quite put your finger on. And then when you mix in some herbs with and a few spoonfuls of honey, this sauce so exquisite that you'll be looking for more foods to serve it over. Strawberry Tomato sauce is perfectly delicious over ice cream, like the cashew vanilla ice cream we made at our cooking class this weekend. But feel free to get creative... try it over oatmeal, as a dip, or maybe even over pasta , on pizza, or add some ginger and serve it over chicken or pork. Limitless possibilities. I would love to hear your ideas on how to use this sweet and savory sauce!

Pour-Over Coffee Method by Nobrow in Salt Lake

The owner and pour-over expert of Nobrow Coffee in Salt Lake, Joe Evans, took some time to teach me the steps of making the perfect cup of coffee using the pour over method. After much picture taking and coffee talk, I sat and savored every sip. Yes, me the one who usually adds a spoonful of honey and steamed milk to even the finest of brews.

I'm so excited to tell you that the next Vintage Mixer event is open to the public. Our first two events were by invite only, which you can read about here and here, but for this event we are opening the doors to the first 25 people to sign up for this special gathering. Long Distance Dinner to Tarahumara in Midway

Does anyone else besides me think we have a shortage of good Mexican food in Salt Lake City? Besides the occasional long wait at Red Iguana (which is not the tex-mex I'm used to anyway) there's not very many other options. So I decided to hunt for more, and in my pursuit I found Tarahumara in Midway.

Utah's Seasonal Produce in August

August is a bountiful time in Utah. The list of ripe fruits and vegetables in season during August in Utah are many, from heirloom tomatoes, to juicy melons, zucchini, and spicy chilies. A time of reaping what you sown in your garden or from a local farmer's garden. The Farmer's Market is full of colorful produce and happy vendors and your pantry should be full of fresh ingredients. I hope your month is full of tasty meals including some of these local fresh foods.
