Spring is coming

As I start off my adventure to the 'Spring City' in China, I realize I'm leaving behind the beginning of spring here in Utah.  Spring is my second favorite season in Utah, after fall of course.  There is so much to look forward to... daffodils, planting in my garden, asparagus, perfectly ripe berries, pulling out the rain boots every so often, and of course spending time outside at the park or in the mountains.

Over the next couple of weeks a few of my favorite local bloggers will be sharing some of their favorite spring recipes.  From ice cream, to fresh salads, you won't want to miss these!  As I board the plane I thought I would also share a few spring recipes with you.  Here are a few of my favorite spring-time recipes.

Dinners
Traditional Greek Salad
Black Bean Burgers
Caesar Salad with Tortellini Croutons
Pasta Primavera
Mediterranean Orzo Salad
Green Minestrone Soup

countdown to China trip

Sometimes it feels like the more we try to plan our travels the less things work out.  Yet when we don't plan things just seem to fall into place.  We tried and tried to visit my sister, who lives in China, last year but could never work it out.  We had resigned to the fact that we probably weren't going to be able to visit when this year, my parents decided to share some frequent flyer miles with us.  And within weeks we were ordering our visas and dreaming of Chinese food. Now we are just days away from our trip.

After several trips overseas I've definitely come to understand that it is always best to have only general plans and sites you want to visit, then allow room for flexibility and the unforeseen adventure.  I've visited too many great places and eaten at too many outstanding restaurants that actually weren't on our 'must see' list, that now I just make plans to not have plans.

The photo above is from my sister's city in China.  Known for its Spring weather, Kunming is one of the more beautiful large cities of China.  While we're there we'll also be traveling to an ancient village in the Chinese countryside and spending a couple of days in Beijing.  I look forward to telling you all about it when I'm back.  I may be able to write a few post while I'm gone but I have some very amazing women who will be guest blogging here while I'm on the other side of the world.  So, look forward to post from Tiffany and Food Finery, Barbara from Barbara Bakes, Emily from Is this really my life, and Jenn from Delightful Delicacies.  I'm so excited about their posts that I may be checking in on my own blog!

Also, if you have any questions about China, traveling in China, or food in China, please post a comment and I'll try and explore some answers.  Or if you have any recommendations, I would appreciate those as well.

The Frida Cookie- Mexican Chocolate Cookie with Molten Chocolate Center

When you find a dish or treat around town that you fall in love with, do you ever wonder if you could make it at home?  One of my favorite cookies around Salt Lake is Ruby Snap's Frida Cookie, a Mexican chocolate cookie with a melted mole center.

our angel

While we're out of town I imagine Henry as the perfect angel dog.  Never misbehaving, biting, jumping on others, or biting his leash.  He would never do anything like that.

Do you Kombucha?

"Do you know about Kombucha?"
"Do I kombu-what?"
"Have you tried Kombucha?"
"I guess not, I've never heard of it."

I've now been introduced to the mighty Kombucha (kom-BOO-cha).  Until reading up about this Chinese tea, all I could understand from my knowledgable friends and coworkers was that it was something to do with tea, mushrooms, good health, and something about being like friendship bread.  Now I know that it is a fermented tea with tons of nutrients like probiotics, amino acids, enzymes, antioxidants etc etc. Kombucha supports digestion, metabolism, immune system, and a long list of other great things. It's origin is Chinese so I'm interested to find out in a few weeks if the Chinese actually drink it or if it is something we Americans have taken and publicized to the extreme, kind of like Brazilian Acai Berries.

But in hopes of staying healthy as we travel (Josh has had pneumonia and I've been fighting a cold), I tried the kombucha.  And...I liked it.  I didn't try a homemade version but instead picked up a cold bottle at Whole Foods (and pricey might I add).  I tried the Ginger Berry flavor, slightly sweet with a little kick of carbonation-like fizz and spice.  You can buy a bottle at Whole Foods or you can get it on tap at the new Trolley Square Whole Foods location.

The mushroom description, I found out, comes from the tea after its been fermented.  Once fermented, it actually looks like a mushroom or pancake.  People share a portion of it (like a friendship bread) and then you let it grow to the appropriate size, then use and pass on a portion.  I'm still unsure on how it goes from tea to mushroom/pancake then back to tea..

Another random fact is that in its more acidic forms, it can actually contain 1.5% alcohol.  Noted.

travel update

One of the most marvelous things about being married to a musician is getting to travel.  Have I told you how much I love to travel?  I love researching the trip, exploring new cities, the unexpected occurences along the way, finding great food and of course meeting new people.  Something about the adventure just strikes a cord deep in my soul.

Snowcat Trip at Powder Mountain

A few weeks back I took a magical trip to the rugged mountains of Northern Utah.  Along with my friends at work, we hopped into a private Snow Cat at Powder Mountain to explore the backcountry.  Being my first real fresh powder experience, I was a bit nervous but after stepping into the widest powder skis I've ever laid eyes on I was feeling a bit more comfortable.  That is until they strapped a avalanche beacon around my chest.

Toto

This shot make some think of the Wizard of Oz for some reason.  The only thing that would make this picture better is if I had been wearing red heels.

A Local's Guide to Park City: Fairweather Foods

In attempts to find out where the locals eat in Park City, I discovered Fairweather Foods.  This little health food market is a place where locals run into good friends, fresh food is served daily, and everyone knows your name (literally).  I came in with a friend, Katie, a local Park City gal, and not only did she run into several friends there but everyone who worked there also seemed to know her.  Is this what life is like in a small town?

Whole Foods and Sunflower Market open in Salt Lake City

The new Whole Foods at Trolley Square opens today and Sunflower Market to follow with an opening this Wednesday!  I am super excited to have closer access to both of these great markets.  I am especially excited for all of the bulk grains at Whole Foods as well as their prepared food section and all of the great prices on fresh produce at Sunflower. I also found out recently that this Whole Foods store is making several types of sausages in-house and dry-curing their own meat. You can also grind your own peanut, almond and cashew butters at both grocers.  For more info see my full post on Visit Salt Lake's blog.

Mary Jane's Clothing in Park City

After working in Park City for a few years and getting to know the area pretty well, I found that there are only a few shops worth a regular visit.  Mary Jane's is one of them.

Dog Silhouette Art

I think Henry's shaggy profile would make a really great silhouette art piece like this one. I just need a good artist to create it.

Snow Day Food

Why do we forget every year that Salt Lake is known for its Spring snow? Last night the valley got pounded with fresh snow. After being rescued by some friends late in the evening, I left my car stranded in a parking lot and went home to some hot cocoa.  Luckily, we have two cars so we can manage without one until the snow melts a bit.

This morning we woke up to a winter wonderland.  I figure if winter keeps lingering I may as well take advantage of it an enjoy more of my favorite winter foods.  Here are a few recipes that help get me through the winter.

Breakfast
Oatmeal Raisin Cookie Oats

Dinner
Wild Mushroom Lasagna (vegetarian)

Dessert
Old Fashioned Pudding (serve hot!)

SILVER, a new Park City restaurant

After visiting Shabu a few weeks ago and trailing up and down Main Street in Park City we discovered a new restaurant, Silver.  I asked around and got all rave reviews from the new establishment, so I knew we had to check it out for ourselves.

From the vogue decor to the exceptional service, we relished every bit of our special dinner.  If I could only have a few words to describe this hot new restaurant they would be:  swanky, sumptuous, posh, and almost sensual.  The blue velvet wall at the entrance, makes you feel like you're walking into a hip LA bar, and the lighting is perfectly dim and dreamy (although not great for food-photography!).  Silver may be best described as an upscale lounge serving up delicate versions of America's favorite comforts.

Behind.

We've been taking Henry up in the mountains to hike in the snow on the weekends.  I think its so hilarious how the snow balls up on his furry coat. Josh calls them his snowsticles. Getting a picture of his behind was much harder than you would think.

Winter Farmers Market in Salt Lake

Maybe I'm late to tell you this news, but there's an indoor farmers market going on in Salt Lake.  I just had the chance to pick up some meat and produce there the other day and couldn't believe I hadn't heard of it before.  The market is open every Saturday and Sunday from 10 a.m. to 4 p.m. and Tuesdays from 3 p.m. to 7 p.m. on State Street.  It will stay open until May 1st so there's still plenty of time to check it out.
