Mint Chocolate Pudding Dessert Shots for A Baby Shower

In honor of my dear friend Maria, who blogs at Two Peas and Their Pod, I am posting up a Baby Shower Recipe for her Virtual Party.  A group of food bloggers around the country will be posting today to honor and celebrate Maria and her baby boy. For her 'in person' shower, I brought these Mint Chocolate Pudding Dessert Shots and today I'll be bringing them to you online.

If you know Maria, you know that she is sweet as a pea. I admire her for her consistency and diligence in blogging. She is also a consistent and diligent friend.  Her blog highlights simple and interesting recipes for the home cook.  Her and her husband reside near us in the beautiful city of Salt Lake. We are all so excited to meet the latest edition of their family.
Mint Chocolate Pudding Dessert Shots
makes about 20 small cups

INGREDIENTS
1/3 cup flour
2/3 cup sugar
1/4 tsp salt
2 cups milk, warmed
10-15 mint leaves wrapped in a cheese cloth
10oz square of quality chocolate
3 slightly beaten egg yolks
1 Tbsp butter
1/2 tsp vanilla
shortbread cookies
whipped cream

DIRECTIONS
Mix flour, sugar, and salt in the top of a double broiler (or place a smaller pot on top of a larger one filled partially with water.  Add milk gradually and cook until thick, stirring constantly. Place the mint leaves (packed in a cheese cloth into the mixture and let them sit while the milk is thickening. Once the mixture is thick, remove the mint then add a small amount of hot mixture to the egg yolks.  Then stir this mixture into the rest of the hot mixture. Stir constantly to prevent the egg yolks from scrambling.  Cook until thickened (this part may take about 10 minutes).  Once thickened, stir in chocolate until melted, then remove from stove and let cool.  When almost cool, stir in butter and vanilla.

For Parfait Dessert Shots, start with crushed shortbread cookies, then add chocolate pudding, then top with whipped cream and a small mint leaf.
