As I start off my adventure to the ‘Spring City’ in China, I realize I’m leaving behind the beginning of spring here in Utah. Spring is my second favorite season in Utah, after fall of course. There is so much to look forward to… daffodils, planting in my garden, asparagus, perfectly ripe berries, pulling out the rain boots every so often, and of course spending time outside at the park or in the mountains.
